Last week, I stopped at Trader Joe’s on my way home from work. Every time I shop there, I wonder why I don’t go more often! Trader Joe’s is awesome =). I always try to buy at least one item that I’ve never bought before. One of my new items this trip was shaved brussels sprouts. I didn’t have any recipes in mind, but I love brussels sprouts so I figured I’d come up with something good. A quick google search led me to this recipe on My Whole Food Life. I loved this recipe for two reasons: I had all the ingredients on hand and prep time = 5 minutes. Unfortunately, it does have to refrigerate for a couple hours to let the flavors mingle. I tried to skip this step the first time, but it’s soooo much better if you wait a couple hours (or overnight). Trust me. It’s the perfect summer side or light meal. I ate it as is for lunch one day and topped with some diced, cooked chicken for dinner one night. If you can’t find shaved brussels sprouts, you can make your own using a mandolin or shredder. Enjoy!
Shaved Brussels Sprouts with Lemon Vinaigrette
2-1/2 – 3 cups shaved brussels sprouts
3 tbsp slivered almonds
1/4 cup fresh lemon juice
1 tbsp honey
1 tbsp extra virgin olive oil
1 tsp dijon mustard
salt, to taste
pepper, to taste
1. In measuring cup or small bowl, whisk together lemon juice, honey, olive oil, and mustard.. Pour over brussels sprouts. Toss to combine. Add salt and pepper to taste.
2. Top with slivered almonds and refrigerate 2 hours or overnight before serving.

Just found you here, only seen the cupcake one before. This sounds great, probably none of these brussel sprouts around here but think I can handle the shredding. Yeah, I doubt you can find brussels sprouts already shaved in Jamestown but I think it’d be worth shredding your own. Grocery shopping is part of my “me time” =)…because I agree, life is short! Thanks for stopping by!
