Last weekend I picked up some beautiful peaches at the farmer’s market. I bought 1/2 peck, which is only 1/8th of a bushel, but if you’re like me those units of measure don’t really mean anything. Let me just say, it was more peaches that I thought! Despite eating several as snacks and on salads, we had barely made a bent in our peach supply so I started looking for ways to incorporate them into our meals. I saw a friend canning peach salsa on instagram and while I didn’t have enough peaches to start canning anything (and I still have peach jam from 2 years ago haha) I decided to make a fresh peach salsa. It was a-mazing! It might sound a little strange at first but trust me, if you like sweet-and-spicy combinations you’ll love this salsa! I’m pretty sure it’d be amazing with tortilla chips too :). I dressed the salmon very simply – 3 ingredients – because I really wanted the salsa to be the star here. The flavors worked so well together. I had originally planned to grill the salmon, but in the end I was too lazy and decided to broil it instead. It was still good, but I’m sure grilling it would have added some extra flavor. So if you have a little extra time (and energy), you could definitely grill the salmon instead of broiling it. Enjoy!
Honey Balsamic Salmon with Peach Salsa
for the peach salsa:
1 peach, pitted and chopped (I left the skin on)
1 jalapeno, seeded and chopped (or leave the seeds for more heat)
1 roma tomato, seeded and chopped
1/2 tbsp lime juice
1/4 cup chopped cilantro
1/8 tsp garlic powder
salt, to taste
pepper, to taste
1. Combine all ingredient in bowl and toss to combine. Let sit while you prepare the salmon.
for the honey balsamic salmon:
1/2 tbsp honey
1/2 tbsp coarsely ground dijon mustard
1 tsp balsamic vinegar
salt
pepper
2 salmon filets (~6 oz each)
1. Preheat oven to broil. In small bowl, combine the honey, mustard and vinegar. Stir to combine.
2. Place salmon on lightly greased baking sheet. Season with salt and pepper. Brush with honey mixture. Broil for 5-7 minutes or until flakes easily with fork. Top with peach salsa.
Note: Alternatively, you could grill the salmon, brushing each side with the honey mixture.
