I saw a recipe for funfetti banana bread on pinterest, and of course, I can get on board with anything funfetti so I had to give it a try! The recipe started with a cake mix. I went back and forth between making funfetti banana bread from scratch or trying the cake mix version. In the end, I decided to use a cake mix. Because sometimes, you’re post-call from a 28 hour shift, haven’t slept in 31 hours, and just want to eat funfetti banana bread without spending a lot (or more than 5 minutes haha) of time in the kitchen measuring out a bunch of ingredients ;). Since I almost never use cake mixes anymore, I didn’t have a funfetti cake mix on hand so I ended up using vanilla cake mix and adding sprinkles. A yellow cake mix + sprinkles would work too. Turns out there are tons of cake mix banana bread recipes out there. I even saw one recipe for butter pecan banana bread. Sounds delicious, right? Feel free to use your favorite cake mix flavor. However, if you prefer dense, heavy banana bread this recipe probably isn’t for you. It’s definitely on the cakey side. But who doesn’t like cake?? Especially cake with sprinkles! =) Enjoy!

Funfetti Banana Bread 

1 (15.25 oz) box vanilla cake mix, dry (I used Pillsbury)*
2 eggs
1-1/2 cups mashed banana (~3 bananas)
2 tbsp canola oil
1/3 cup rainbow sprinkles*

1. Preheat oven to 350 degrees. Spray 9×5 loaf pan with non-stick spray.
2. In bowl of stand mixer with paddle attachment combine cake mix, eggs, banana, and oil. Mix on medium speed for 2 minutes. Stir in sprinkles and pour into prepared pan.
3. Bake in preheated oven for 50-55 minutes or until golden brown and a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes. Remove from pan and place on cooling rack.

Note: You could use funfetti cake mix in place of the vanilla cake mix and sprinkles.
