Happy Pi Day! I know, I know. I’m a nerd, but in my defense, when I greeted my family with “Happy Pi Day!” my dad said, “Next year will really be Pi Day” (3.1415) haha. I’m surrounded by nerds! Luckily, they also love pies. I’ve had this pie on my list to make for months, and it was all I had hoped it would be! It will remind you of a cross between pecan pie and toll house pie….delicious! It doesn’t taste like almond joy candy bars exactly, but it does have all the same flavors – almonds, chocolate, and coconut. It was a hit with everyone and I’ll definitely be making it again! Almond Joy Pie
2 eggs
1 cup brown sugar
8 tablespoons butter, softened
1 tablespoon vanilla
¼ teaspoon salt
¾ cup shredded sweetened coconut
¾ cup sliced almonds
1 cup semi-sweet chocolate chips
½ cup all-purpose flour
1 (9-inch) pie crust, unbaked
1. Preheat oven to 350°F.
2. In bowl of stand mixer with paddle attachment, beat butter and sugar until light and fluffy. Add eggs, vanilla and salt and mix until combined.
3. Stir in coconut, almonds and chocolate chips until combined.
4. Add in flour and stir until just combined. Pour into unbaked 9-inch pie crust, and bake in preheated oven for 30 minutes.
