It seems that people either really like grapefruit or they hate it. I happen to really like it and Jordan, well, he hates it =). But I thought he might be able to tolerate grapefruit muffins since they really don’t have a strong grapefruit taste. He ate two, but then kept reminding me throughout the next several days that he doesn’t really like grapefruit. Point taken haha. However, if you do enjoy grapefruit, then you should give these muffins a try. The grapefruit flavor is subtle but still there – the tartness nicely balanced by the sweet glaze. I’m loving anything citrus lately. I’m blaming it on these polar vortexes that we keep getting trapped in. I live in Tennessee. It’s not supposed to get that cold here! 😉 My solution? Turning my heat up to 75 and eating lots of citrus…because I associate citrus with warmer weather. Come on spring! Hope everyone is staying warm. Enjoy!

Pink Grapefruit Muffins
1 cup white whole wheat flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 egg
3 tbsp sugar
1/2 cup low-fat buttermilk
1 tbsp canola oil
1 tsp vanilla
1 tsp grapefruit zest

1/4 cup powdered sugar
1/4 tsp grapefruit zest
1/2-1 tsp grapefruit juice

1. Preheat oven to 400 degrees. Grease muffin tin with nonstick spray.
2. Combine powdered sugar, grapefruit juice, and zest in bowl. Whisk until smooth. Set aside. In mixing bowl, combine flour , baking powder, baking soda, salt and sugar in bowl and whisk to combine.
3. In a separate bowl, combine egg, oil, milk, and vanilla. Add dry ingredients to the wet and stir just until combined. Divide batter between 6 muffin cups.
4. Bake 15-20 minutes or until golden brown. Top with glaze.
Makes 6 muffins.
