Y’all are probably going to laugh when you read this, but I kinda love bran muffins. I know most people associate bran muffins with old people, but seriously guys give bran muffins a chance ;). I found this recipe right on the wheat bran packaging. It looked like a winner and so I decided to give it a try. I took a bite and decided these were the best bran muffins ever! Or at least the best I’ve ever had =). They were very moist and had a surprisingly delicate crumb for a whole wheat, bran muffin. Even Jordan approved! An added bonus, of course, is that they’re super healthy, but even if you’re not into “healthy” recipes you should totally give this recipe a try just because it’s so delicious! Enjoy!

Molasses Bran Muffins 
1/2 cup unprocessed wheat bran
3/4 cup whole wheat flour
1/4 cup raisins
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup skim milk
1/4 cup molasses (or honey)
1/2 cup unsweetened applesauce
1 tbsp oil
1 egg, beaten

1. Preheat oven to 400°F.
2. Combine wheat bran, flour, baking soda and baking powder. Stir in raisins.
3. In a separate bowl, blend applesauce, milk, molasses, oil and egg. Add to dry ingredients and stir just until moistened.
4. Spoon into greased muffin tin (or paper muffin cups) and bake for 15-20 minutes. Makes 6 muffins.
