It’s been a rough couple weeks (as you’ve probably guessed by my sporadic posting). I’ve been working a lot and unfortunately it’ll be several more weeks before I get any relief. They weren’t lying when they said intern year was hard! So, what’s a girl to do when she’s exhausted and it seems like nothing’s going her way? Should she bite her husband’s head off when he suggests ordering pizza for dinner? Umm, no! She should make a pie! Or at least blog about a pie that she made several weeks ago =). Although, this recipe is so easy, you won’t need a lot of time or energy to whip this pie up – no-bake and only 5 ingredients! It’s the perfect stress-baking dessert. And did I mention that it tastes like an oreo blizzard? Doesn’t get any better than that! Enjoy!
No-Bake Oreo Pie
39 oreo cookies, divided (an entire 15.5 oz package)
1/4 cup butter or margarine, melted
1 pkg (8 oz) 1/3 less fat cream cheese, softened
1/3 cup sugar
8 oz thawed frozen whipped topping, divided (or 3 cups whipped cream)
1. Crush 26 cookies to form fine crumbs; mix with butter until blended. Press onto bottom and up side of 9-inch pie plate. Refrigerate while preparing filling.
2. Crush remaining cookies. Beat cream cheese and sugar in medium bowl with mixer until light and fluffy. Add crushed cookies (reserving a few crumbs for garnish) and 2 cups whipped topping; stir gently until blended. Spoon into crust. Garnish with remaining whipped topping and reserved crumbs. Refrigerate 2 hours or until firm.
