Umm, is anyone else excited this week is almost over?? It’s definitely been a long week! And what makes a long, hard week better than cookies with lots of rainbow sprinkles? Nothing. Amen. =) I ate way too many of these cookies. They’re basically just a soft, chewy sugar cookie with lots of sprinkles but the butter extract is what gives them a slight “cake batter” taste. It sounds weird but it tastes delicious. Whip up a batch and see for yourself! You know, “trust but verify” ;). Of course, you could always just leave the butter extract out and you’d have delicious “Funfetti Cookies” – either way. Enjoy!
Funfetti Cake Batter Cookies
1/2 cup unsalted butter, room temperature
1 cup white sugar
1 egg
1 tsp vanilla
1 tsp butter extract (optional but necessary for the “cake batter “flavor)
1 tsp salt
1 tbsp baking powder
2 cups all-purpose flour
6 tbsp rainbow sprinkles
1. In bowl of stand mixer with paddle attachment, cream together butter and sugar until light and fluffy. Add egg, butter extract, and vanilla and beat until smooth.
2. In separate bowl, combine the salt, baking powder, and flour. Gradually add to butter mixture and mix on low speed until fully incorporated. Stir in sprinkles by hand.
3. Cover dough and refrigerate at least an hour. Preheat oven to 350 degrees.
4. Using a 1-1/2 tbsp scoop, place dough onto lightly greased or parchment lined baking sheets. (You can press more sprinkles onto each ball of dough if desired.) Bake for 11-12 minutes or until edges are lightly browned. Transfer to wire rack to cool completely.
