I recently visited Trader Joe’s for the very first time =). Of course I bought some new ingredients – including silken tofu. I didn’t have any recipes in mind when I bought it, so I went to google and found several recipes for chocolate mousse. I’m not going to lie. I was skeptical. Two ingredient chocolate mousse…with tofu…and it’s good?!? YES!! I was so surprised when I tasted the finished mousse. It was delicious! And not in a it’s-good-for-tofu way either! You’d never guess it’s made from tofu. It’s pretty much the perfect quick and easy chocolate mousse – rich, chocolatey, and super creamy. I’ll definitely be making this mousse again! It’s delicious by itself but I’m pretty sure it’s be good with crumbled oreos on top too ;). Enjoy!

2-Ingredient Easy Chocolate Mousse
12 oz silken tofu (I used Trader Joe’s brand)
2/3 cup semi-sweet chocolate chips (I used Hershey’s Special Dark)
1 tbsp water

1. Combine water and chocolate chips in microwave safe bowl. Microwave in 30 second intervals until melted and smooth.
2. Drain tofu. Place in bowl of food processor or blender and puree until smooth. Add melted chocolate and process until fully combined and smooth. Cover with plastic wrap and refrigerate several hours before serving.
