I wanted to make a cookie similar to molasses crinkles but with honey instead of molasses. I thought about using that same recipe (eliminating the spices and substituting honey for molasses) but then I found this recipe on Cookie Madness. My cookies spread a lot, so they were a little thinner than I would have liked but I think this could be easily remedied by chilling the dough. However, they had great flavor and a nice, chewy texture – yum! 🙂 I’ll definitely be making these cookies again. The last two weeks I’ve had orientation and they’ve stressed the importance of stress management and healthy coping skills. I’ve not seen baking/eating cookies listed as a healthy coping skill but I’m going to try it anyway ;). Enjoy!
Honey Cookies
2/3 cup oil
1 cup sugar
1 egg
1/4 cup honey
2 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
2 cups all-purpose flour
turbinado sugar for rolling
1. Preheat oven to 375 degrees F.
2. In a mixing bowl, stir together oil, sugar, eggs, honey, baking soda, salt and vanilla. Mix well, then stir in the flour, stirring just until it is mixed in. Refrigerate dough for at least an hour.
3. Shape the cookies into balls about ¾ to 1 inch in diameter and roll them in turbinado sugar. Place 2 ½ inches apart on parchment lined cookie sheets and bake for 8-10 minutes. They should be nicely browned around the edges, crackly and golden. Makes 4 dozen.
