After Jordan got his new blender last year, I made smoothies like crazy, and then, inevitably, I got super burned out! I hadn’t made a smoothie for months, but now that it’s warming up (finally!), smoothies are back on my radar =). After a hot run, I love to have a cold smoothie for breakfast. I especially love smoothies like this one that are ready in 5 minutes or less! I hadn’t tried chia seeds until the other day when I picked some up at The Fresh Market. I had intentions of making lemon poppy seed muffins except with chia seeds, but forgot to get lemons…typical ;). I will eventually make my muffins, but until then I’ve been finding other uses for them. I wasn’t sure how they’d be in a smoothie – if they’d make your smoothie really “seedy” tasting or not, but they really don’t! Of course, you taste the ones on top that I garnished with, but the others just blended up smooth. It’s the perfect way to sneak some extra fiber into your smoothie. Enjoy!

Strawberry Banana Chia Smoothie 
1 frozen banana, peeled and sliced
1/2 cup chopped fresh strawberries
1/4 cup plain fat-free greek yogurt
1/2 tsp vanilla
1 tbsp chia seeds

Combine all ingredients in blender and process until smooth and creamy. Garnish with more chia seeds and chopped strawberries, if desired. Serves 1.
