I found out a few weeks ago that I’ll be doing my residency in Knoxville. We’ve been in Johnson City for 8 years (undergrad and medical school), and while I’m excited about moving it’s also bittersweet. I’ve made some good friends while here and come graduation, we’re all going separate ways =(. We’ve been making the most of our last few weeks together with lots of “friend time”. I made these cookies for our last get-together and they were a hit. Of course, anything that starts with butter and sugar is usually a hit =). Since I’ll be moving in a little over a month, I’ve been trying to clean out my pantry some and what better way to use up some Reese’s pieces than cookies! I started with my favorite chocolate chip cookie recipe and just replaced some of the chocolate chips with miniature Reese’s pieces. I decided to use miniature chocolate chips since they’re closer in size to the miniature Reese’s pieces, but you could use whatever you have on hand. Enjoy!

Reese’s Pieces Chocolate Chip Cookies
3/4 cup melted butter
1 cup brown sugar
1/2 cup white sugar
1 egg
1 egg yolk
1 tbsp vanilla
2 cups self-rising flour
1-1/3 cups (10 oz) miniature Reese’s pieces
1 cup miniature chocolate chips

1. Combine melted butter, brown sugar, and white sugar in large bowl and whisk to combine. Add egg, egg yolk, and vanilla and whisk until smooth.
2. Stir in flour just until combined. Add in Reese’s pieces and chocolate chips. Stir until fully combined. Refrigerate dough for at least 2-3 hours.
3. Preheat oven to 325 degrees. Spray baking sheets with non-stick spray. Place dough on cookie sheets using a #20 scoop. Bake for 15-18 minutes or until centers are almost set and edges are lightly browned. Let cookies cool on baking sheet for a couple minutes before removing to wire rack to cool completely. Yield: 22-24 large cookies.
