It’s another hot one here in Tennessee, but no worries, I’ve got another great no-bake recipe for you =). I had a box of cornflakes that I wanted to use up and so I googled around a bit. Most of the recipes I found had peanut butter and I really wanted something different. Eventually, I stumbled across this recipe and I’m so glad that I did! They’re really simple to make although you will need a candy thermometer. Be sure to cut them into small squares because they are very sweet – almost candy-like- but very tasty. You don’t necessarily have to use coconut and pecans. I’m sure other nuts would be delicious too but use whatever you have on hand. Make these bars and then head outside to soak up some sun! It’s a beautiful day =). Enjoy!

No-Bake Coconut Pecan Cornflake Bars
4 cups cornflakes
1-1/2 cups flaked unsweetened coconut
3/4 cup chopped pecans
1/2 cup light Karo syrup
1-1/2 cups white sugar
1/2 cup milk
1/4 cup butter
dash of salt

1. In large bowl, combine cornflakes, coconut, and pecans.
2.  In 3-qt sauce pan, combine syrup, sugar, mik, butter, and salt. Bring to a boil over medium heat, stirring frequently until mixture reaches 240 degrees. Pour over cornflake mixture.
3. Press into greased 9×13 pan. Cool. Cut into squares.
