I’ve been wanting to make green monster pancakes since I made green monster muffins a while back. Somehow I never got around to making them, but since St. Patrick’s Day is coming up on Sunday, I thought they’d be the perfect breakfast because, after all, they are green! =) Just like the green monster smoothie, it’s the fresh spinach that gives them their beautiful green color – you don’t even have to add food coloring. The spinach doesn’t really give a flavor – you mainly taste the banana. They’re light, fluffy, and delicious. Jordan and I both loved them. Enjoy!
In other news, today I found out where I’ll be doing residency at….*drum roll please*…KNOXVILLE, TN! Yay! =D It was our #1 pick and Jordan and I are so happy. And now the house hunt officially begins. Of course, that will probably have to wait until after we get back from Hawaii since we leave on Monday. So much excitement all at once! Green Monster Pancakes
1-1/4 cups low-fat buttermilk
1 egg
2 cups packed baby spinach leaves
1 tbsp melted butter
1 very ripe banana
1 tsp vanilla
1 cup white whole wheat flour
1/4 cup unprocessed wheat bran
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp white sugar
1. Preheat non-stick skillet or griddle over medium-low heat. Combine buttermilk, egg, spinach, butter, banana, and vanilla in blender and pulse until smooth.
2. In separate bowl, combine flour, wheat bran, baking powder, baking soda, salt, and sugar. Whisk to combine.
3. Pour wet ingredients into dry and whisk just until combined. Using #20 scoop, pour batter onto preheated skillet. Flip once.
