I had an afternoon off last week so naturally I decided to bake up some cookies to drop off at Jordan’s work =). I ran this recipe by him first. Since he doesn’t love coconut, he was skeptical but gave the go-ahead. I was pretty excited because I love the chocolate and coconut flavor combo. When you combine that with a perfectly chewy oatmeal cookie, well, let’s just say I ate more than I probably should have ;). I don’t think Jordan had any complaints, so I think they must have been a hit with his co-workers too. Of course it helps that they were still warm when I dropped them off =). I think I’m going to miss 4th year. Enjoy!
Dark Chocolate and Coconut Oatmeal Cookies
1 cup butter, melted
1 cup brown sugar, packed
1/2 cup white sugar
2 eggs
2 tsp vanilla
2 cups all-purpose flour
1/2 tsp salt
1 cup sweetened shredded coconut
1-1/2 cups extra dark chocolate chunks (or just dark)
2-1/2 cups old-fashioned oats
1. In bowl of stand mixer, beat butter and sugars with paddle attachment until creamy. Mix in eggs and vanilla and beat for another minute.
2. In a separate bowl, combine the flour, salt, soda, and coconut. On low speed, slowly add the dry ingredients to the wet ingredients. Mix just until combined – do not overmix.
3. Stir in chocolate chunks and oats by hand. Refrigerate dough for a couple hours.
4. Preheat oven to 350 degrees and line baking sheets with parchment paper. Scoop dough using a 1-1/2 tbsp scoop onto prepared baking sheets. for 10-12 minutes or until edges are lightly browned.
