I love peanut butter. I also love cookies. However, I admit that peanut butter cookies aren’t always my first choice. These cookies might just change my mind though! Big peanut butter flavor with crisp edges, chewy centers, and toffee bits – umm, can I have another one or two or three?? 😉 Yeah, they’re that good. I promise. I hadn’t thought about pairing heath with peanut butter before but it is definitely a winner. I think I’ll have to experiment with this flavor combo some more…maybe cupcakes? =) Enjoy!
Peanut Butter Toffee Cookies
1/2 cup butter, softened
1 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla extract
3/4 tsp baking soda
1/2 tsp salt
1 cup all-purpose flour
3/4 cup quick oats
8 oz. toffee bits
1. In a large bowl, cream butter, peanut butter, and sugars together until light and fluffy. Add eggs and vanilla and mix until well combined.
2. Add in baking soda, salt, flour, and oats. Stir in toffee bits. Refrigerate dough for an hour.
3. Preheat oven to 350 degrees. Using a (1-1/2 tbsp) scoop, place dough on parchment lined baking sheets. Bake for 10 minutes. Cool on pans for 3 minutes before transferring to wire rack to cool completely. Makes 44 cookies.
