Aren’t bite sized treats the cutest? And they’re perfect for finger food events because you can have a bite of everything. Well, unless there are 15 different desserts because the host went wild baking all day. Of course, I would never do that. Okay, yeah I may have gone overboard once or twice…or every time we have a party ;). But I digress, these cheesecake bites are delicious – gooey brownie topped with a no-bake chocolate cheesecake mixture. How could that be bad? If you like cheesecake, you should definitely give these bites a try. And if you’re like my mom and love light, cool-whippy desserts, you will definitely love these! =) Enjoy!

Chocolate Cheesecake Bites
1 box brownie mix
1 cup semi-sweet chocolate chips, melted
8 oz. cream cheese, room temperature
1/3 cup white sugar
8 oz frozen whipped topping, thawed

1. Prepare brownie mix as directed on the box, dividing batter between greased miniature muffin tins. Bake at 325 degrees for about 15 minutes or until center is almost set. Cool 10 minutes before removing from pan. Place on wire rack to cool completely.
2. Beat cream cheese, melted chocolate, and sugar in large bowl on medium speed until light and fluffy. Gently fold in whipped topping. Pipe onto cooled brownie bites. Garnish with chocolate sprinkles or shaved chocolate if desired. Refrigerate several hours before serving. Store in the refrigerator. Makes ~36.
