I think it’s only fitting to start the new year off with a healthy recipe =). Don’t worry though, it doesn’t taste too healthy! I had several failed attempts, but I finally have a delicious bran muffin recipe to share with you. I’ll be making these muffins over and over again. In fact, I’ve already made an apple cinnamon version – yum! I’m not making any new year’s resolutions this year, but I’d love to hear what yours are. Happy New Year!

Blueberry Bran Muffins
3/4 cup white whole wheat flour
1-1/4 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
3/4 cup 100% bran cereal (such as All-bran or Fiber One)
2/3 cup fat-free buttermilk
1 egg
1 tbsp canola oil
1/3 cup white sugar
1 tsp vanilla extract
1/2 cup wild blueberries, fresh or frozen

1. Preheat oven to 400 degrees and grease 6 muffin cups with non-stick spray.
2. In large bowl, combine buttermilk, egg, oil, vanilla and cereal. Let stand 5 minutes.
3. In separate bowl combine flour, baking soda, baking powder, salt, and sugar. Add to milk mixture and stir just until combined. Gently fold in blueberries.
4. Divide batter between prepared muffin cups and bake for 20-25 minutes or until golden brown. Makes 6 muffins.

Nutritional Info (per muffin): 162 calories; 3.8 g fat; 30.4 g carbohydrates; 4.5 g fiber; 4.8 g protein
