I think the title of this recipe pretty much says it all. I mean, peanut butter cookie granola…do I really need to say more? Yeah, I didn’t think so. It’s like a peanut butter cookie but in granola form and healthy! I saw a version on Pinterest but it called for all kinds of ingredients that I didn’t have on hand, so I just came up with my own version. It’s good with milk, over yogurt, or just as an afternoon snack. I bet you have all the ingredients on hand too, so you should just go ahead and whip up a batch! Enjoy!
Peanut Butter Cookie Granola
3 cups old-fashioned oats
2 cups puffed brown rice cereal
1/4 cup ground flaxseed
1/4 cup wheat germ
1 tsp ground cinnamon
1/2 tsp salt
1 tsp vanilla
2/3 cup unsweetened applesauce
1/2 cup crunchy peanut butter
1/2 cup honey
1. Combine honey, peanut butter, vanilla, and apple sauce in small bowl. In larger bowl, combine oats, cereal, flaxseed, wheat germ, cinnamon, and salt. Add wet ingredients to dry ingredients and toss to fully coat.
2. Pour onto greased baking sheet. Bake at 325 degrees for 40-50 minutes or until crunchy. Stir once.
