We don’t need to discuss my love of muffins again do we? Okay, good. I’m also loving Honey Roasted Peanut Butter right now =). It’s slightly sweeter than regular peanut butter with just a hint of honey roasted flavor. (Honey roasted has 7 grams of sugar per serving and plain has 3 grams, so not a huge difference.) When paired with banana, this honey roasted peanut butter makes one good muffin! Peanut butter and banana already go together so well and then throw in some honey flavor – delicious! The banana flavor isn’t too strong, but provides some natural sweetness and helps the muffins to be light and fluffy. These muffins aren’t overly sweet, so if you want a sweet, cupcake-like muffin you will probably want to add another tablespoon or two of honey. Enjoy!
Healthy Honey Roasted Peanut Butter and Banana Whole Wheat Muffins
1 cup white whole wheat flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 egg white
1 tbsp honey (if you want a sweeter muffin, use at least 2 tbsp)
1/2 cup mashed ripe banana
1/2 cup fat-free plain greek yogurt
3 tbsp honey roasted crunchy peanut butter
1/4 cup skim milk
1 tsp vanilla
1. Preheat oven to 400 degrees. Grease muffin tin with nonstick spray or line with paper liners.
2. Combine flour, baking powder, baking soda, and salt in bowl and whisk to combine.
3. In a separate bowl, combine egg white, yogurt, peanut butter, honey, milk, and vanilla. Add dry ingredients to the wet and stir just until combined. Divide batter between 6 muffin cups.
4. Bake 20 minutes or until golden brown. Makes 6 muffins.
