A few weeks ago, I was going to the grocery store almost every day and buying tons of food that I didn’t really need. And then, of course, my cabinets became so full I could hardly open the doors without stuff falling out! I decided I was not going to store again for 2 weeks – somewhat of a challenge to see what I could make with what I already had on hand. I really needed to bake something with Biscoff because I had 5 jars….yes, 5 jars!!! Don’t ask me how haha. I decided to combine biscoff, blond brownies, and apples and see what happened. It was truly a delicious combination and perfect for fall =). Enjoy!

Apple Biscoff Brownies

5 tbsp melted butter
1/2 cup brown sugar
1/2 cup biscoff spread
1 egg
1 tsp vanilla
1 cup self-rising flour
1 cup chopped apple (about 1 medium apple)
15 biscoff cookies, coarsely crushed

1. Preheat oven to 350 degrees. Spray 8 inch square baking dish with nonstick spray.
2. Combine butter, sugar, and biscoff spread in large bowl and beat until combined. Add in egg and vanilla.
3. Stir in flour until just combined. Fold in chopped apple and crushed cookies. Pour into prepared pan and bake for 30 minutes or until golden brown.
