I love fruity desserts. Actually, I love all dessert but especially apple pies, crisps, crumbles, etc =). And now that the apple tree in my backyard is loaded with beautiful apples, I’m in heaven! Another reason to love fall. These fruit crumble bars are sort of like a fruit crisp except not quite as crisp and when they cooled I thought they tasted like a homemade Nutri-Grain bar – except better, of course ;)! I had some peaches and blueberries on hand as well, so I tossed some of those in too – delicious! You can use whatever fruit you have on hand just aim for around 5 cups total. Enjoy!
Fruit Crumble Bars
1/2 cup white sugar
1/2 tsp baking powder
1 1/2 cups all-purpose flour
1/2 cup quick oats
1/2 cup butter or margarine
1 egg
1/4 tsp salt
1/2 tsp ground cinnamon
2 1/2 cups chopped apple
1 1/2 cups chopped peach
1 cup blueberries
1/2 cup white sugar
1 1/2 tbsp cornstarch
1. Preheat the oven to 375 degrees F. Grease 8 inch pan.
2. In a medium bowl, stir together 1/2 cup sugar, flour, oats, and baking powder. Mix in salt and cinnamon. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
3. In another bowl, stir together the sugar and cornstarch. Gently mix in the fruit. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
4. Bake in preheated oven for 45 minutes, or until top is slightly brown.
