Isn’t this like the cutest idea ever? Okay maybe not ever, but I thought it was a neat idea. Bake the cookie dough as one big cookie and then cut it into strips while it’s still warm. Perfect for those days when you don’t want to spend all day hovering over the oven baking cookies. And these cookie sticks are just as tasty as regular cookies!

You can really add whatever toppings you want to your cookie sticks. I chose pecans, toasted coconut, chocolate chips and butterscotch chips, but feel free to make them your own. I think sprinkles would be super cute, but we all know I’m kind of obsessed with sprinkles =). Just get in the kitchen and have fun! Enjoy!

Cookie Sticks
1/2 cup canola oil
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup quick oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semisweet chocolate chips
1/2 cup butterscotch chips
1/4 cup toasted coconut
1/2 cup chopped pecans

1. In a large bowl, combine the oil, sugars, egg and vanilla. Combine the flour, oats, baking soda and salt; gradually add to sugar mixture and mix well. Divide dough in half.
2. On a greased baking sheet, shape each portion into a 15-in. x 3-in. rectangle about 3 in. apart. Sprinkle chocolate chips, butterscotch chips, coconut, and nuts over dough; press lightly.
3. Bake at 375° for 6-7 minutes. (Bake for 8-9 minutes for crispier cookies.) Cool for 5 minutes. Cut with a serrated knife into 1-in. strips; remove to wire racks to cool. Yield: about 3 dozen.
