I love homemade pizza, and Jordan’s two favorite foods are pizza and chicken (even at 25 haha) so when I saw this Thai Chicken Pizza I had to try it. I’m pretty much in love with sweet Asian chili sauce and there for a while I was incorporating it into almost every meal =). (It’s pretty awesome in quesadillas too.) If you like sweet-and-spicy, you’ll love this pizza. You can easily adjust the heat to your family’s taste by adding more or less red pepper flakes. The peanuts add a nice crunch, but if you don’t like peanuts or have an allergy you can leave them off. Enjoy!
Thai Chicken Pizza
1 ball your favorite pizza dough
Olive oil, for brushing
1/3 cup sweet Asian chili sauce, plus extra for drizzling
1/2 large zucchini, thinly sliced
1 tsp red pepper flakes
1 cup shredded cooked chicken
1 cup shredded mozzarella cheese
3-4 tbsp chopped peanuts
2 tbsp minced fresh cilantro
2 tbsp minced fresh basil
1. To make the pizza, increase the oven temperature to 500Ëš F and preheat a pizza stone. Roll out the pizza dough into a 12-14 inch round. Lightly brush the perimeter of the dough with olive oil. Spread the chili sauce over the crust in an even layer. Layer with the zucchini, red pepper flakes, shredded chicken, and cheese.
2. Transfer the pizza to the preheated pizza stone and bake until the cheese is melted and bubbling and the crust is lightly browned, about 10-12 minutes. Remove from the oven and let cool slightly. Drizzle with chili sauce and sprinkle evenly with the peanuts, cilantro, and basil before slicing and serving.
