Despite the fact that the overwhelming majority of the recipes here on the blog are sugary treats, I actually eat healthy food too! Shocker, I know ;). All things in moderation. I love salads, especially really good caesar salad. Unfortunately, caesar dressing is quite unhealthy and the low-fat store-bought versions that I have tried were seriously lacking. But when I saw this recipe on Skinnytaste, I had to give it a try. Is it as good as regular caesar dressing? Not quite, but very close! And it’s easy enough to make on a weeknight. Just dump everything in the blender. And done =). Make sure to buy good quality parmesan cheese. Please don’t use that stuff in the can. Pretty please? I promise it will make a huge difference. Skinny Creamy Caesar Dressing
1/3 cup grated (good quality) parmesan cheese
1/4 cup fresh lemon juice
1 small garlic clove
1/2 tbsp Dijon mustard
2 anchovy fillets
1 tbsp extra virgin olive oil
5 tbsp fat free Greek yogurt

1. In the bowl of a food processor add the cheese, the lemon juice, garlic clove, mustard and the anchovies.
2. Turn the machine on and let it run for 15 to 20 seconds. Add the oil and yogurt and let the machine run for another 15 seconds. Makes 3/4 cup.
