Remember a few weeks ago when I blogged about the Blackberry Oatmeal Muffins and I said my mom made them? Well, she actually make these that same week but somehow I’m just now getting around to blogging about them. I think I got a little out of order – oh well ;).
I don’t particularly like doughnuts but if I’m going to eat a doughnut, it will be a doughnut hole. So, if you’re like me and like doughnut holes and muffins then you should definitely give this recipe a try. It’s a quick and easy muffin recipe with ingredients you probably already have on hand. I admit, rolling the muffins in the cinnamon sugar is a little time consuming but totally worth it – they actually do taste like doughnut holes. Enjoy!
Cinnamon Sugar Doughnut Hole Muffins
1/2 cup white sugar
1/4 cup margarine, melted
3/4 teaspoon ground nutmeg
1/2 cup milk
1 teaspoon baking powder
1 cup all-purpose flour
1/4 cup margarine, melted
1/2 cup white sugar
1 teaspoon ground cinnamon
1. Preheat oven to 375 degrees. Grease 24 mini-muffin cups.
2. Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
3. Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
4. While muffins are baking, place 1/4 cup of melted margarine in a bowl.
5. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture.
