Strolling through the candy aisle, a bag of Reese’s pieces caught my eye. When I got home, I started brainstorming for a dessert with Reese’s pieces and of course I thought of cookies =). I started with a basic chocolate cookie and added chopped peanuts and reese’s pieces – because chocolate and peanut go so well together! The results? Delicious! I mean, let’s just forget that it’s bikini season and eat all the cookies we can hold – deal? 😉 The brown and orange ended up reminding me of Halloween, but don’t wait until October to make these cookies! Enjoy!
Reese’s Pieces Cookies
1 cup white whole wheat or all-purpose flour*
1/4 cup cocoa powder
1/4 tsp salt
1/2 teaspoon baking soda
1/2 cup softened butter
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups Reese’s pieces
1/2 cup chopped lightly salted peanuts
1. Preheat oven to 350 degrees F. Whisk together the flour, cocoa powder, salt and baking soda.
2. Beat the butter and brown sugar with an electric mixer in a large bowl until smooth. Beat in egg and vanilla until completely incorporated.
3. Mix in the flour mixture until just incorporated. Fold in the peanuts and reese’s pieces; mixing just enough to evenly combine.
4. Using a #40 scoop (1 1/2 tbsp) drop onto lightly greased cookie sheets. Bake in the preheated oven until the edges are golden, 9 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
Note: White whole wheat flour will yield a much heartier crumb than all-purpose flour but still delicious. However, if you are wanting a more delicate, chewier crumb go with the all-purpose.
