This week was the first week of my community medicine rotation in Sevierville. I have to stay in Sevierville and the “dorms” (part of the old hospital) that we’re staying at don’t have internet yet =(. They also hadn’t been cleaned in a long time – yuck!! So I’ve been walking to the hospital to use their internet, but they have blogs (and facebook!!) blocked, which is why it’s been over a week since I updated. I never dreamed they’d have my blog blocked lol. They’re hoping to get the internet hooked up by the end of next week, so cross your fingers. And did I mention that we don’t have a kitchen and I haven’t cooked/baked anything in a week?? Yeah, I know – it’s like torture ;).

Anyway, enough complaining – back to the food =). This recipe is perfect for the beautiful summer weather we’ve been having. And y’all know how much I love smoothies! I’m not a huge pineapple fan but mixed with banana and coconut milk, it’s delicious! As with all my smoothies, you can easily modify the recipe to suite your tastes. This was my first smoothie using coconut milk, but I don’t know why it took me this long to try it – yum! Enjoy!


Tropical Smoothie
1/3-1/2 cup crushed pineapple (without juice), frozen
1 small frozen banana, roughly chopped
1/2 cup lite coconut milk
1/2 cup crushed ice
1 tbsp ground flaxseed (optional)
1 tbsp pineapple juice

Combine all ingredients in blender and pulse until smooth.
Notes:
1. If you like your smoothies thinner, use less ice.
2. You can certainly use regular coconut milk, but I used lite because it’s what I had on hand and it’s lower in calories.
3. This smoothie isn’t overly sweet, but if you’re wanting more of a dessert smoothie just add a drizzle of honey or agave nectar.
