Yep…another nutella recipe! I admit that I kind of get on kicks and lately it’s been nutella and citrus – but not together =). I wanted to make a nutella rice krispy treat and judging by the number of rice krispy treat recipes on the blog, it’s no secret how much I like them ;). I know I’ve already posted a nutella peanut butter rice krispy treat, but I wanted to switch it up a bit and do an espresso nutella version. I started with all your usual suspects – butter, marshmallows, and rice krispies – and then added instant chocolate pudding mix, honey, nutella, and espresso. Delicious – with a lot of chocolate flavor – and as I’ve said before (many times) you don’t really taste espresso per se, it just deepens the chocolate flavor. A little goes a long way though – they’re very sweet. I think next time I’ll omit the honey. Jordan, however, thought they were perfect as is so I guess it just depends on your tastes. Enjoy!
Nutella Espresso Rice Kripsy Treats
¼ cup honey*
½ cup nutella
1 tbsp butter, melted
5½ -6 cups rice krispies cereal
1 (3.9 oz) box instant chocolate pudding mix
10.5 oz marshmallows
½ tbsp espresso powder
1 tsp vanilla
1. Combine melted butter and marshmallows in large microwave safe bowl. Microwave for about a minute or until marshmallows are fully melted.
2. Stir in honey, nutella, vanilla, espresso powder, and pudding mix and microwave about 30 seconds more. Gently stir in rice krispies.
3. Press into greased 8 inch square pan or 9×13 pan (depending on how thick you want your treats).
Note: These rice krispy treats are very sweet. If you want them to be a little less candy-like, just omit the honey.
