This smoothie came about purely by accident. I started making myself a smoothie for an afternoon snack and looked in the freezer to see what my options were. What I found? Not a huge selection – strawberries or blueberries. I chose strawberries because after all, we’re getting close to strawberry season! Even though it’s still kind of early, the strawberries that you buy now have sooo much more flavor than the ones I bought even a month ago – yay! Have I burned everyone out on smoothies yet? Hopefully not ;). What makes this smoothie special – and taste like a milkshake – is the white chocolate pudding mix. In a moment of sheer genius I looked one shelf up from the vanilla and spotted the pudding mix. Without another thought I added some to the mix. I wasn’t sure what to expect because I’d never added pudding mix to a smoothie before, but it adds a creaminess like you’d get from ice cream but without all the calories (especially if you use the sugar-free mix). A very satisfying snack indeed! =) Once again I decided to use milk instead of yogurt but feel free to use whatever you like or have on hand. Smoothie recipes are very flexible – make it your own. Strawberry Milkshake Smoothie
10 frozen strawberries (about 1 cup)
1/2 cup crushed ice
1 tbsp instant sugar-free white chocolate pudding mix (dry)
1/2 cup skim milk
1/2 tsp vanilla
Combine in blender and pulse until smooth. Makes 1 large or 2 small smoothies.
