I’m going to let you in on a little secret – I love peanut butter. Wait…that wasn’t a secret?? Oh well ;). I’m also kind of obsessed with smoothies and frozen drinks. Good thing Jordan got a blender for Christmas haha. This smoothie is certainly not an original flavor combo, but peanut butter and bananas go so well together that I had to pair them in a smoothie…and it was delicious! I made this smoothie for breakfast and unlike the Strawberry Milkshake Smoothie or Cake Batter Smoothie this one isn’t really a dessert smoothie. It’s not super sweet and the peanut butter and flaxseed meal make it more filling but that doesn’t mean it isn’t as tasty. In fact, this may be my favorite smoothie yet (but it’d be really hard to pick a favorite). It’s also a perfect post-workout snack, especially now that we’re getting into Spring and some beautiful days to run outside – yeahhh! Enjoy!
Peanut Butter Banana Smoothie
1 banana, frozen
1 tbsp peanut butter
1 tbsp golden flaxseed meal
1/2 cup crushed ice
1/2 cup skim milk
Combine in blender and pulse until smooth. Garnish with banana slices and chopped peanuts, if desired.
Notes:
1. I freeze my bananas with the peel intact. When I take them out of the freezer to use for smoothies, I place them in the microwave for about 30 seconds. This will thaw them slightly so they are easy to peel.
2. If you’re allergic to peanuts, you could substitute almond butter or nutella or biscoff or any spread you like =).
