The first Larabar I tried I have to admit I didn’t really enjoy. But everyone had raved about them so much that I didn’t give up and tried a couple different flavors. It turns out that some of the flavors don’t contain any salt (!!) and that was why I found them to taste so…bland (??). For those of you that don’t know what Larabars are, they are very healthy fruit and nut bars: no preservatives and a short, simple ingredient list (no more than 9). They don’t have a flavor that’s exactly like my copycat recipe, but they do have a few different chocolate ones. And is it really surprising that the chocolate ones are my favorite? 😉 I didn’t make bars, but instead chose to make them bite size. They were delicious and the key was salted almonds. Enjoy!
Chocolate Larabar Bites
1 1/2 cups salted almonds
1 1/2 cups pitted unsweetened dried dates (check the ingredient list to make sure you don’t get the ones that have already been coated with sugar)
3/4 cup raisins
1 tsp vanilla
6 tbsp cocoa powder
Combine in food processor and process until combined. Form into 1″ balls. Makes about 30.
