You may have guessed it by now, but I really love rice krispy treats ;). For me, it’s really hard to beat a regular ol’ rice krispy treat – but that doesn’t stop me from trying haha. What makes this recipe special is the addition of pudding mix. I have to admit I was skeptical about adding pudding mix to rice krispy treats – pudding mix?? really? Yes, really! Really, really good!! I also happen to be a huge butterscotch fan too, which doesn’t hurt anything ;). And is there really a dessert any easier than rice krispy treats? Dessert in 5 minutes without heating up the kitchen =). These would be perfect for a bake sale or even your next get together with friends or family because they are so portable and everyone loves them. I also made a version with nutella, espresso, and chocolate pudding mix – do I really need to say any more? I didn’t think so. Enjoy!
Butterscotch Rice Krispy Treats
6 cups rice krispy cereal
4 tbsp butter or margarine (melted)
10.5 oz package marshmallows
1 (3.4 oz) box instant butterscotch pudding mix
1/2 cup butterscotch chips
Drizzle (optional): 2 tbsp white chocolate chips and 2 tbsp butterscotch chips
1. Combine butter and marshmallows in large microwave safe bowl. Microwave for 1 minute or until marshmallows are melted.
2. Stir in pudding mix and butterscotch chips until fully combined and chips are melted. Gently stir in cereal.
3. Press into greased 9 inch pan. If desired, melt white chocolate chips and drizzle over treats. Repeat with butterscotch chips.
