I love breakfast foods–specifically high carb breakfast foods like pancakes, waffles, muffins, chocolate gravy, etc ;). The problem is the way you feel 30 minutes or an hour after that high carb breakfast, and I’ve mentioned before that I have no self control when it comes to pancakes and waffles (although I may have more than my cousin Angellica–she ate 10 waffles the other night!!). Which is exactly why I don’t make them very often, but sometimes you just gotta live a little =). And these waffles are whole wheat so they aren’t that bad for you–in moderation of course. I know it seems like I’m obsessed with bananas these days. They keep showing up in my recipes, but the truth is bananas aren’t really my favorite fruit. Guess I’m on a kick, huh? Oh well. If you like banana bread and waffles you’ll love this recipe. It’s the perfect combo of the two! Enjoy!
Whole Wheat Banana Bread Waffles
1 cup skim milk
1 egg, separated
1/2 tsp vanilla
3 tbsp canola oil or melted butter
1 very ripe banana, mashed
1 1/4 cups white whole wheat flour
2 tbsp granulated sugar
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup chopped pecans
1. In large bowl, whisk together all dry ingredients. Make a well in the center and pour in milk, egg yolk, vanilla, oil and mashed banana. Stir together until just combined.
2. Whip egg white until stiff peaks form. Gently fold whites into batter. Stir in pecans. Pour into hot, greased waffle maker and cook to your preference. Serve with fresh banana slices, more pecans and maple syrup.
