I’m pretty sure this was the best salmon I’ve ever cooked – and probably the best I’ve ever ate! If you’re like me and love salmon, you won’t want to miss this recipe. It’s a really nice blend of sweet and spicy. And so easy – start to finish in less than 15 minutes. This was one of those recipes that I saw and immediately knew what I was fixing for dinner that night. And as fate would have it, I had made homemade burger buns a couple days earlier =). Don’t you just love when that happens? Enjoy!

Sweet and Spicy Salmon Burgers
2 4-5 oz wild Atlantic salmon
2 tsp paprika
2 tsp brown sugar
1/2 tsp cumin
2 tsp chili powder
1/4 tsp cayenne pepper
1-2 tbsp honey
salt
burger buns

1. Preheat broiler on high.
2. Mix together the chili powder, cumin, brown sugar, paprika and cayenne pepper.
3. Sprinkle salt on the salmon fillets, followed by the spice mixture. Lay fillets in a pie dish or on a tin foil-lined sheet tray and drizzle the honey over top. Broil fish for 5-8 minutes, until flaky but still pink.

Note: I only used about half the spice rub–depending on how big your filets are. You just want to use enough of the spice rub to generously cover the entire surface of the salmon.
