I saw a recipe on pinterest for Reese’s Krispies and so iPad in hand, I immediately went to the kitchen to start making them–to find that I had only one reese’s cup and about a cup of rice krispies. Major letdown! I definitely want to try the Reese’s Krispies recipe at some point, but I didn’t really want to venture out to the store right that minute so I had to explore other options.

A while back I got on a Raisin Bran kick–like an every single morning kick–and then I got burned out. Shocking, right?? 😉 Unfortunately a couple months later, I still have raisin bran taking up cabinet space. And so I decided that now would be a good time to either use it or toss it. I googled for some recipes using raisin bran and mostly found muffins and cookies–nothing that really looked that good, so I came back to the Reese’s Krispies recipe which had peanut butter, corn syrup, and chocolate chips (along with some other ingredients). I decided I’d just make up my own raisin bran bars. Now this is somewhat dangerous because sometimes my flavor combos taste better in my mind that they do when they actually hit my taste buds. This time however, it was just the opposite. I started with peanut butter, but didn’t want to use corn syrup so I used honey, and then impulsively grabbed some cinnamon chips instead of chocolate chips. As soon as I added them to the peanut butter and honey I doubted the decision–would the cinnamon be too strong?? It wasn’t at all! These bars may not be much to look at but they have a delicious flavor. And did I mention easy? Four ingredients and the microwave are all you need, so what are you waiting for? Make these tonight! Peanut Butter and Honey Raisin Bran Bars
1 cup peanut butter
1/2 cup honey
3/4 cup cinnamon chips
4 1/2-5 cups raisin bran cereal

Combine peanut butter, honey, and cinnamon chips in a large microwave safe bowl. Microwave at 30 second intervals until chips are melted and mixture is smooth. Gently stir in cereal. Press into greased 9 inch square pan.

    Whatta GREAT idea! A friend of mine recently swore to cut chocolate out of her diet for the next month or so and this would make a GREAT sweet treat substitute. I must admit, I would feel quite so guilty snacking on this as I do those cheesecake brownie bars! =P

    Swearing out chocolate for an entire month?!? That's hardcore! I agree this would be a good alternative though. You might not miss the chocolate. =)
