Now that I’m officially on Christmas break (yipee!), maybe I can finally get caught up on blogging. I have about 10 drafts to finish–fun, fun! 😉 It’s been weeks since I made this recipe and I may have let a few sweet recipes jump in front of this one, but the blog is i wrestled a cupcake once and I usually get more excited about the dessert recipes. I can’t help myself. =)

It’s kind of impossible to make regular lasagna for 2 without having a ton of leftovers, but this lasagna rolls recipe is perfect for smaller families because the recipe can easily be halved and is perfectly portioned already–added bonus! It’s also less time consuming than regular lasagna. You could make your own marinara sauce if you wanted, but I just used store bought and it was still delicious. I decided to keep it vegetarian with spinach and mushrooms, but if your family loves meat you could easily add meat in with the sauce. I’m sure that would be delicious too! Enjoy!

Spinach and Mushroom Lasagna Rolls
9 lasagna noodles, cooked and drained
15 oz ricotta cheese
1/2 cup parmesan cheese
1 tbsp dried parsley
2 cloves garlic, grated
9 oz. frozen chopped spinach, thawed and drained
2 cups mushrooms (any mix you like–I used shittaki and portebella)
1 tsp olive oil
1 cup mozzarella cheese
salt and pepper to taste
1 (26 oz) jar marinara sauce

1. Preheat oven to 350°.
2. Place olive oil in nonstick skillet over medium heat. Add mushrooms and cook until slightly softened, a couple minutes. Remove from heat.
3. Combine mushrooms, spinach, ricotta, parmesan, garlic, parsley, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 13 baking dish.
4. Lay out lasagna noodles flat. Take about 1/4 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
5. Ladle sauce over the noodles in the baking dish and top each one with mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

    made this, then enjoyed it. very good, just me so I hope it freeze good. have six meals out of it.
