Summer break is officially over and I have orientation this week. =( I had a great week off, but all good things must come to an end I guess. I bought some cinnamon chips months ago to use in some scones but I never got around to making them, so last night when I opened the pantry to look for some inspiration to bake something the cinnamon chips caught my eye. I just used a basic oatmeal cookie dough and then added my cinnamon chips and some dried cranberries. They were delicious (too bad it doesn’t make very many). Enjoy!
Cinnamon Chip Oatmeal Cookies
1 stick butter, softened
1/2 cup brown sugar
3 tbsp white sugar
1 egg
3/4 cup white whole wheat flour
1 1/4 cups quick oats
1/2 tsp baking soda
10 oz. cinnamon chips
1/2 cup dried cranberries
1 tsp vanilla
Preheat oven to 350 degrees. Beat butter and sugars until light and fluffy. Add egg and vanilla and mix well. Add flour, oats and baking soda and mix just until combined. Stir in cranberries and cinnamon chips. Refrigerate dough for about 30 minutes before baking. Drop onto lightly greased cookies sheets using a 1 1/2 tablespoon scoop. Bake for 9-10 minutes. (Cookies will not look done, but don’t overbake). Cool on pan for 2 minutes and then transfer to wire rack to cool completely.
