Another test down today and so naturally I had to bake something or two or three things! =) (These were the third cookie I made today.) Chocolate chip cookies are my go-to cookie but I thought it would be nice to change them up a little. Friday I bought a big bag of pistachios from Sam’s and I thought they would be great in a cookie. I took my favorite chocolate chip cookie recipe and used white chocolate chips and added pistachios. The results were all I had hoped … DELICIOUS! They have crisp edges with a chewy center, which is just the way I like my cookies.

White Chocolate Chip Pistachio Cookies
2 cups self-rising flour
3/4 cup butter, softened in the microwave until partly melted
1 cup brown sugar
1/2 cup white sugar
1 egg
1 egg yolk
1 tbsp vanilla extract
2 cups white chocolate chips
1 cup pistachios

1. Preheat oven to 325 degrees. Beat butter and sugars together until light and creamy. Add egg, yolk, and vanilla. Beat until fully combined.
2. Add in flour and mix until just combined. Stir in chocolate chips and pistachios.
3. Drop dough 3 tbsp at a time onto lightly greased cookie sheets. Bake for 13-15 minutes or until edges are lightly browned. Place on wire rack to cool.
